I tried a recipe from Eileen for Bake Ahead French Toast. Of course, I had to substitute a bunch of things: soymilk for milk, soy butter for butter and a powdered egg substitute that I found at Wegmans. (It’s called Ener-G Egg Replacer and it worked well.) Chuck and I both liked it, but Nick did not. Par for the course. We’ll try something else fun for him.
