My new favorite frosting

I made this recipe for chocolate chip buttercream frosting today and it’s now the frosting I will use for cupcakes.  Chuck said he could eat a pound of it.  Yum, yum, YUM!

Beany salad

Chuck made this for lunch today without the onions or red pepper flakes because we didn’t have any.  Great salad!

Used up some bananas

We had a few bananas that were too ripe for my liking, so I found a recipe for banana muffins to try.  They were great!  Really moist and yummy…I’ll make them again.

SunButter Balls

A friend whose son has allergies to peanuts (which Nicky cannot have yet) recommended this recipe to me.  It’s certainly not Aunt Leslie’s peanut butter balls, but they’re good!  I’ll make them again for sure!  Plus, I wasn’t even aware of SunButter (made from sunflower seeds) before.  Nicky already had a sample and had [...]

Happy Thanksgiving!

We had a really wonderful holiday with so much to be thankful for!  We are very, very blessed to have such beautiful family in so many ways – when we asked Nicky what he’s thankful for, his answer was, “You’re thankful for Ryan!” (he refers to himself as “you”).  Life doesn’t get any better [...]

Cake in the crock pot

I made this very easy recipe today; I might make it again but without the coffee.

Not nesting, just being productive!

Yummo!

I made this recipe for zucchini, potato and ham soup from Rachel Ray and it was just delicious!  I froze our leftovers and will definitely make it again!

Alfredo sauce

I found this recipe for a vegan alfredo sauce and tried it out, since I had all of the ingredients at home.  It was very rich but very good; we mixed it with small pasta shells, grilled chicken strips and peas.  I’ll definitely make this one again.

Another fruit cobbler

I made this fruit cobbler for dessert tonight.  It wasn’t too much different from the last one, except that I used peaches.  I’d make it again for sure, but I might use a smaller pan next time, maybe a 9-inch square instead of a 9X13 so that the cakey part is a bit thicker.  [...]
