Yesterday and today, I made it my focus to make some meals that had enough leftovers to freeze for while I’m in the hospital and for a while after. We’re just about out of room in the freezer, so I think I’ve got enough to last us for a little bit. Chuck plans to take the next three weeks off for a paternity leave, so I’m sure we’ll have plenty of time to prepare dinners during that time, but sometimes it’s just nice to have a quick meal to pop in the microwave. I feel accomplished now!
