I made this recipe for pulled pork sandwiches for dinner tonight, easy and YUM! Nicky liked it, too, but I just think he’s going through the stage that Diana warned us about – sometimes he just doesn’t eat. He ate well all yesterday, and breakfast and lunch were good today, so I’m not worried. I also made the sweet potato (“potabo”) bake that I made last Easter, minus the almonds and coconut that turned out very good.
We saw Katie (and Rylie) from next door after dinner and I told her what I’d made for dinner. She recommended another super easy way to make pulled pork, using root beer to cook the pork instead of beef broth. I found this recipe, and we’ll definitely be trying that soon! I can’t believe how easy it was to make!
