Dinner

I made this recipe for pulled pork sandwiches for dinner tonight, easy and YUM!  Nicky liked it, too, but I just think he’s going through the stage that Diana warned us about – sometimes he just doesn’t eat.  He ate well all yesterday, and breakfast and lunch were good today, so I’m not worried.  I also made the sweet potato (“potabo”) bake that I made last Easter, minus the almonds and coconut that turned out very good.

We saw Katie (and Rylie) from next door after dinner and I told her what I’d made for dinner.  She recommended another super easy way to make pulled pork, using root beer to cook the pork instead of beef broth.  I found this recipe, and we’ll definitely be trying that soon!  I can’t believe how easy it was to make!

Weekend

Margaret and I took Parker and Nicky to the zoo on Friday.  We had a great time!  When we saw the baboons, the zookeeper told us that it was naptime and that the mommies and babies were snuggling together.  Now, when I tell Nicky we should pretend it’s naptime in the baboon cage, he says “nuggle, nuggle” and gives me a very cute hug and snuggle.  He said that his favorite animals were the “ephements” (elephants – our new favorite word!).

Yesterday, he finally took his first big-boy bath in our tub at home.  We haven’t had a stopper for the tub, and the bathtub we were using for him was huge, so he’s had plenty of room.  After visiting Grandma Chris and Grandpa Mike and taking a bath in their tub, though, he’s been asking for a big-boy bath every day, so Chuck finally got a stopper for the tub.  He loved it!  I snapped a few photos that I’ll post soon.

This morning, Nicky asked for “oitmeal” (oatmeal) for breakfast.  We haven’t had that in at least two months, so I was surprised.  I was more surprised, but shouldn’t have been, when he looked at it and said he didn’t like it, but then proceeded to eat all of it and ask for more.

It’s never-ending around here…

New recipes

I tried a few new recipes this week.  Two vegetable sides were from a recipe book sent to me by Eileen from the Air Force Spouses’ Club.  The corn casserole was super-easy and tasty (as it should have been, with half a cup of soy butter!) and the carrot casserole was good as well.  Yesterday, I made this dessert.  Nicky, of course, didn’t like it because it was chocolate, and somehow I managed to make a child that doesn’t like chocolate.  Chuck and I liked it, though, and I’d probably make it again for a better-for-you dessert that is a little different.

20-week prenatal visit

Chuck took the day off from work today so that he could join Nicky and me for our anatomical ultrasound this morning.  When we went for the same thing when I was pregnant with Nicky, they only had the little monitor to look at, so I was on my back and really uncomfortable with a full bladder and couldn’t concentrate on or enjoy the first photos.  Since then, however, they’ve installed a huge flat-panel monitor on the wall across from the exam table, so I could look right at everything, which was really great!  We got some great views of the head, hands, and abdomen – don’t worry, we turned away while she measured the legs.  We didn’t want to chance seeing anything we didn’t want to!

I posted a couple of photos and a minute-and-a-half-long video here. The photos weren’t great, but there’s a good feet-shot in the video.

Right after the ultrasound, I had my regular office visit with Dr. Kerpelman.  Turns out, they had me at 22 pounds under my pre-pregnancy weight before I got pregnant again, and I’m now up 21 pounds.  It’s a bit discouraging, but I’m not even back to where I was and I’m more than halfway through now, so the weight gain should slow down from here on out (especially since I’ve starting exercising regularly again).  Dr. Kerpelman confirmed that everything looked good on the ultrasound and listened for the baby’s heartbeat again, which we heard.  I mentioned to her that I have been feeling lots of movement – much more than I remember feeling with Nicky at this point.  She said that it’s normal with a second pregnancy, but a little unusual in my case because the placenta is in the front (I had no idea where the placenta was with Nicky).  I must be growing a very strong baby in there!  Before she left the room, Nicky sang a little bit of “Copacabana” for her, which she loved!

Our next visit will be in four weeks, at which we’ll schedule the C-section (first appointment of the day!) and get me ready for the glucose tolerance test later that week.  Until then, I just keep growing the baby.  :)

Nicky’s repetoire

He might have liked it!

I tried a new recipe tonight – Creamy Cheesy Ham and Pasta.  Of course, I substituted soy products for the milk ones and we didn’t have any onions.  Because I only had vanilla soymilk, it was a little sweeter than originally intended, so we put some pepper on top for flavor and enjoyed it very much!  Even Nicky took a few bites before spitting it out and saying that he didn’t like it, which is very normal for him these days.  I’ll make this recipe again!

Allergies

Chuck and I both have seasonal allergies that seem to flare up in the spring, right when all of the flowers start to bloom. We thought Nicky was developing those same allergies last year, and we were right. This past week or so has been full of boogers, sneezing and coughing. Chuck’s been mildly affected, thank goodness – he’s got to take care of Nicky and me, because we’re both having a rough time. Nicky won’t really take medication very well, and I want to avoid it if I can, so we’ve been enjoying lots of time on the inside looking out. Generally, this season only lasts a few weeks for Chuck and me, so I’m sure that we’ll be outside to enjoy the nice weather soon enough. Of course, it’ll probably go back to snowing again…

More cooking

I tried a recipe from Eileen for Bake Ahead French Toast.  Of course, I had to substitute a bunch of things:  soymilk for milk, soy butter for butter and a powdered egg substitute that I found at Wegmans.  (It’s called Ener-G Egg Replacer and it worked well.)  Chuck and I both liked it, but Nick did not.  Par for the course.  We’ll try something else fun for him.

Jessica and Jerry’s wedding photos

Always on the run, I grabbed our camera at the last minute on the way to Jessica’s wedding and didn’t realize that we only had one battery (and they’re not very good in the first place).  Needless to say, we didn’t take any photos on our camera.  Luckily, my dad took a bunch and posted them on our website here.  Enjoy!
